It’s tradition to bring in the new year with a glass of bubbles and a kiss. While many call sparkling wines champagne, they can only be called that if they are from the region, Champagne. Something similar to champagne is cava. It is made in Spain in the same style as champagne, but with different grapes. The most popular are: macabeu, parellada, and xarel-lo. Cavas tend to be drier with nutty accents.

Retails at about $30. It is a blend, offering some great flavors. We recommend trying the Rose.
FREIXENET CORDON NEGRO BRUT
Retails at about $14-$20. These are very easy to find at most stores that sell liquor. Although it is cheap, it provides a distinct delicious flavor. It is medium bodied with tastes of apple and ginger.
Pairings
Cava and its bubbles are very well paired with fried foods and cheese. The bubbles help cut through the richness of the fats. Try this next time you have some fish and chips. Let us know what you think!
